The ever-popular Caesar salad is renown world-wide, however, it’s not common knowledge that this leafy staple was actually invented in Mexico.   Caesar Cardini, who is credited with creating the salad was Italian by birth, immigrated to San Diego but during the Prohibition Era operated restaurants in Tijuana.  According to urban legend, one very busy night the kitchen ran short, and salads were made with what was on-hand.  In order to give a bit of flair, the salads were tossed at the tables.
