Shopping in Cozumel: Butter

This article is not based on scientific research, rather, the writer’s complete and utter love of that wonderful substance known as BUTTER!

Pliny the Elder called butter “the most delicate of food among barbarous nations”. With this in mind, not having easy access to the sweet, creamy deliciousness can drive a sane person mad. Such is our current state of affairs in our little island paradise.

Yes, we have all spoken ad nauseum about the lack of access to certain seasonings, spices, herbs and other ingredients that we need to cook our fabulous meals but certain staples should be readily available….even here! I can get Himalayan pink salt, Mediterranean sea salt and even Hawaiian black salt but try to find quality butter on any given day? Therein lies the rub.

Now, don’t get me wrong, you can find butter but finding butter that tastes great or cooks well is a tricky proposition. Whether you are baking a cake or just buttering your toast, the right butter can make all the difference. There are many variables that go into determining the flavor and texture of butter. Butter made from a fermented cream is known as cultured butter while butter made from pasteurized fresh cream is called sweet cream butter. There are many other types of butter, but this fascinating information is virtually useless when faced with little to no selection.

 

A few years ago, when I really started experimenting with cooking, I bought the always available GLORIA brand butter.  It is relatively inexpensive, and I found that it was adequate to use in recipes for cooking and baking.  The flavor, however, left much to be desired, and the consistency was too oily when heated up for things like Hollandaise sauce.

 

Since then, I discovered LURPAK, which is a Danish brand. It was delicious and cooked well, melted well, spread well and met all of the qualifications essential to a good quality butter but you may have noticed I use the word “was”. It has disappeared from the shelves here! Once upon a time, MEGA had it fairly consistently and, if they were out, you could find it at Chedraui. No longer. Lurpak has seemingly vanished from the island. The second choice was then Président Butter, a product of France. It is equally good but a tad more expensive, and also not always available. So I discovered KELLER’S brand, which is a U.S. made product only sold at Pacsadeli. The flavor is quite good, it cooks well and the price is comparable for what you get. But once again, availability is a problem.  And then there is the never ending issue of salted vs. unsalted.  Inevitably, whatever store I am in is fully stocked with the opposite of what I need!!  Such is island life.

Thanks to FB pages such as Cozumel4You, there is a wonderful alert system used by many here on the island. If you see it, share it! Tell everyone so they can rush out and get it because it will likely not be there tomorrow and we butter lovers must stick together!

 

One last thought. When I first moved here, almost 14 years ago, this would have been a non-conversation so, all in all, as another islander pointed out recently, our choices are so much more varied and plentiful than in years past.

Este artículo no tiene como base una investigación científica sino el amor total de la escritora por esa maravillosa substancia conocida como MANTEQUILLA.

 

“El alimento más delicado entre las naciones bárbaras, así era como Pliny the Elder llamaba a la mantequilla. Con esto en mente, no tener acceso fácil a la dulce y cremosa exquisitez, puede llevar a una persona a la locura. Así son las cosas actualmente en nuestro pequeño paraíso isleño.

 

Hemos hablado hasta la saciedad sobre la falta de ciertos condimentos, especies, hierbas y otros ingredientes que necesitamos para cocinas nuestras fabulosas comidas, pero es posible obtener ciertos productos básicos….¡incluso aquí! Puedo conseguir sal rosa del Himalaya, sal de mar del Mediterráneo e incluso sal negra hawaiana. ¿Pero tratar de encontrar mantequilla de calidad cualquier día? Ahí está el meollo.

 

No me malinterpreten. Pueden encontrar mantequilla; pero encontrar mantequilla que sepa delicioso o con la que se pueda cocinar bien, es una situación complicada. La mantequilla hecha a base de crema fermentada es conocida como mantequilla cultivada; en tanto que la mantequilla hecha de crema fresca pasteurizada es conocida como mantequilla dulce. Existen muchos otros tipos de mantequilla; sin embargo, es esta fascinante información es virtualmente inútil cuando no se tiene o casi no se tiene de dónde elegir.

 

Hace algunos años, cuando realmente comencé a experimentar en la cocina, compre la marca de mantequilla GLORIA que siempre está disponible. Es relativamente económica y encontré que era adecuada para algunas recetas de cocina y para hornear. Sin embargo, el sabor dejaba mucho que desear y la consistencia era demasiado aceitosa cuando se le calentaba para preparar cosas tales como salsa holandesa.

 

Entonces descubrí LURPAK, una marca danesa. Era deliciosa, se cocinaba bien, se derretía bien y cumplía con todos los requisitos esenciales de una mantequilla de buena calidad. Pero si se dan cuenta utilicé la palabra “era”.  Desapareció de los anaqueles. Hace algún tiempo MEGA la manejaba de manera casi constante y, si no la tenías, era posible encontrarla en Chedraui. Ya no es así. Aparentemente Lurpak ha desaparecido de la Isla. La segunda opción entonces era la mantequilla Président; un producto francés. También bastante venta, pero un poco costosa y no siempre estaba disponible. Luego descubrí la marca KELLER’S, producto estadounidense que sólo se vende en Pacsadelli. El sabor es bastante bueno, se cocina bien y el precio es comparativo por lo que uno obtiene. Pero una vez más, la disponibilidad es un problema; y luego está el interminable problema de la salada contra la no salada.  De manera inevitable, ¡sin importar la tienda en la que me encuentre ésta tendrá exactamente lo opuesto a lo que necesito! Esa es la vida en la Isla.

 

Gracias a páginas en FB tales como Cozumel4You, existe un maravilloso sistema de alerta que muchos en la Isla utilizan. ¡Si lo ven, compartan la información! Digan a todos para que vayan de inmediato y lo adquieran pues es muy posible que b estarán ahí mañana y, ¡los amantes de la mantequilla debemos mantenernos unidos!

 

Una última reflexión. Cuando me mudé aquí, hace caso 14 años, esto no se hubiera comentado; así que después de todo, como señaló otra persona que reside en la  Isla, nuestras opciones son mucho más variadas y mayores que en años pasados.
