Cozumel Chefs Discuss their Inspirations & Favorite Island Dishes

Ask any island resident or visitor about food, and you’re bound to get a lot of responses.  Restaurants, dining out, and cuisine plays a major role in the social life and activities here on Cozumel.

We sat down with 4 island chefs  – Chef Jose Alcerreca, from La Inombrable, Chef Sergio Turriza from Novena Ola,  Chef Rosy Ortega from Mr. Sanchos Under the Stars, and Chef Manuel Hernández from Pancho’s Backyard  and asked them about what inspires them.

I am a Mexican cook and Chef at La Inombrable restaurant. I have an 11-year professional experience. Since the beginning of my career what I love the most is Mexican food. I have worked for several years in seafood restaurants, as well as steak and international cuisine restaurants in Mérida, Playa del Carmen and Tulum.

My mother is who inspired me to start my path into the kitchen and I have devoted myself in mainly learning techniques, ingredients, and Mexican food dishes; but I still have a long way to go.

Chef Sergio Turriza from Novena Ola restaurant:

Born 40 years ago in Mérida, Yucatán, and raised in Isla Mujeres. With an empirical training, 21-year experience in hotel gastronomy. I began as a waiter and later a bartender; then the kitchen where I advanced until I reached the position as Executive Chef.

I worked in hotel chains such as Hyatt, Fiesta Americana, Holiday Inn, Presidente InterContinental. I travel abroad for Mexican festivals and exhibits in Philippines, Nicaragua and Chile.

I am a fusion cuisine lover (speaking about combining techniques and ingredients from other places with Yucatecan and Mexican regional cuisine.)

I am fond for Mexican, Mediterranean, Oriental, Peruvian and Argentinean food.

I studied and got my bachelor’s Degree in Gastronomy, Chef of the Culinary Institute of Mexico (ICUM) in Monterrey, Nuevo Leon. While studying I was an intern in several restaurants such as Guido’s and Pepe’s. Also worked at the Presidente InterContinental hotel in Cozumel. I went to Florence, Italy for a month to learn about Italian food and fell in love with pasta and wine. In 2017 I spent two months in Paris working in Pierre Hermé.

Upon graduation I was hired by the Broadmoor hotel in Colorado Springs, working in one of their best restaurants: La Taverne. I learned a lot from several great Chefs I had the opportunity to work with,

Now I am in Cozumel, working at Mr. Sancho’s Spa Suits and creating menu proposals. I currently taking a Certification Course given by the Mexican Sommeliers Association to create menu proposals with wine pairings.

Chef Manuel Hernández from Pancho’s Backyard:

Pancho’s Backyard cuisine was born from the desire to honor Mexican cuisine, making unique dishes from it, knowing that they are the product born out of love and transmitted orally in the family and reinvented over and over again. That is their essence.

We try to exalt its roots by reinventing classic dishes of this Mexican Cuisine; mixed cuisine par excellence that does not require an identity card, taking dishes from other cultures and making them its own. We honor it by using top quality ingredients with a tendency to the healthy, we experiment, transform, substitute and add to satisfy our own palates and those of others.

Actually, I like the whole menu, nut if I had to choose one, I would choose the rib eye aguachile, because I love the combination of meat and spicy and sharpness of the black aguachile. It’s an interesting combination that mixes the Mexican food from the Pacific with a good cut.

Don Fidel Isleño Risotto with Lobster and Egg Poche – a dish with history.

As a child I remember when economy was tight. My grandfather, don Fidel Trejo, was a fisherman. When going out fishing and when it was not a good day, he only came home with whatever he could catch, including lobster tails. And while being a large family, he prepared them with eggs and rice so all would get servings. So, I made a dish that had those three things and would take me back to my childhood remembering my grandfather’s stews.

I There are so many! I love our risottos; the pork belly tacos, cheese tortellinis dipped in Bolognese Ragu.  That pasta is one of my favorite recipes to prepare. The Ragu takes a long time to cook and with basic ingredients! Simple but tasty!

Just as a mother has no favorite chile, it is difficult to choose a dish. All are the fruit of love; children of our cuisine. However, we are especially proud of our chipotle steak; slightly spicy and smoky. Or the cosmopolitan and daring taste of the grilled Norwegian salmon, with subtle sweetness of agave honey. And, how about the aromatic and satiny cilantro cream or the fish with axiote (annatto) No. It is very difficult to choose!

Cozumel inspires me to think that, being an island, on the beach, we can only find seafood. But La Inombrable’s cuisine is unique as we not only serve seafood, we also specialize in cuts and contemporary Mexican food from central and northern Mexico. It inspires me to think that at La Inombrable we not only have hood food, but also offer a unique and unforgettable experience..

Chef Sergio Turriza from Novena Ola restaurant:

I am inspired by the sea, the view, the landscapes, the sunsets, the atmosphere, the sense of freedom, the vegetation, its lively colors in everything… and be able to add different dishes to its gastronomy with regional and Mexican roots, giving the place and tourists unique and innovative experiences, helping Cozumel be in the spotlight as a great destination not only for its paradisiacal beauty but also for its culinary selection.

Everything inspires me! Its beauty, the ocean, nature… but mostly the people! We Cozumelenians are warm, we welcome people with open arms and make them feel at home. Cozumel is truly a paradise and home for many, thanks to its people, passion, warmth, joy and traditions!

Los Chefs de Cozumel hablan de aquello que los inspira y de sus platillos favoritos en la Isla

Pregunte a cualquier habitante o visitante acerca de la comida y es seguro que onbtendrá muchas respuestas. Los restaurantes, salir a cenar y la cocina juegan un papel importante en la vida social y en las actividades en Cozumel.

Nos sentamos a platicar con cuatro Chefs de la Isla: el Chef José Alcérreca del restaurante La Inombrable; el Chef Sergio Turriza de Novena Ola; la Chef Rosy Ortega de Mr. Sancho’s Under the Stars, y el Chef Manuel Hernández de Pancho’s Backyard, y les preguntamos qué es lo que los inspira.

Coz4You: Por favor cuéntenos un poco sobre su trayectoria.

La Inombrable

Soy cocinero mexicano y chef del restaurante La Inombrable, tengo 11 años de experiencia profesional, desde los inicios de mi carrera lo que más me apaciona es la comida mexicana, he trabajado varios años en restaurantes de mariscos, también en restaurantes de cortes de carne e internacionales en Mérida, Playa del Carmen y Tulum

Mi madre es la persona que me ha inspirado a iniciar este camino a la cocina, y me he dedicado a aprender principalmente técnicas, ingredientes y platillo de comida mexicana, sin embargo aún me queda un largo camino por recorrer.

Hace de 40 años, nacido en Mérida Yucatán, y creció en isla Mujeres

Formación empírica 21 Años de experiencia en la gastronomía en hotelería

Inicie como mesero, posteriormente cantinero y luego cocina donde me desarrolle hasta la posicion de Chef Ejecutivo.

Labore en cadenas hoteleras como Hyatt, Fiesta Americana, Holiday inn, Presidente InterContinental.     Viajes al extranjero para elaboración de festivales Mexicanos y exposiciones como Filipinas, Nicaragua, y Chile.

Amante de la cocina fusion(hablando de combinar tecnicas, e ingredientes de otros lugares con la cocina regional yucateca y mexicana)

Gusto por la comida Mexicana, Mediterranea, Oriental, Peruana y Argentina.

Chef Rosy Ortega del Mr. Sanchos Abajo las Estrellas:

Yo estudié y me gradué de Lic. en Gastronomía, Chef del Instituto Culinario de México (ICUM) en Monterrye, Nuevo León. Durante la carrera estuve de practicante en diversos restaurantes como Guidos y Pepes. También estuve en el Hotel Presidente Intercontinental de Cozumel. Fui a Florencia, Italia un mes a aprender sobre comida Italiana, y me enamoré de la pasta y el vino. En el 2017 estive dos meses en París trabajando en Pierre Hermé.

Al graduarme, fui contratada por el Broadmoor Hotel en Colorado Springs, donde trabajé en uno de sus mejores restaurantes: La Taverne. Estuve aprendiendo muchode varios grandes chefs con los que me tocó trabajar.

Ahora estoy en Cozumel, trabajando en Mr. Sanchos Spa Suites y creando propuestas de menús. También estoy cursando un Diplomado en Vinos impartido por la Asociación de Sommeliers Mexicanos para poder crear propuestas de menús con maridaje.

La cocina de Pancho’s Backyard nace como el deseo de honrar la cocina mexicana, de hacer platos únicos de ésta, a sabiendas de que son producto del amor y transmitidos oralmente en el seno familiar y reinventados una y otra vez. Esa es su esencia.

Novena Ola

Tratamos de enaltecer sus raíces haciendo nuestra reinvención de platos clásicos de esta cocina mexicana, cocina mestiza por excelencia que no pide carta de identidad, toma platos de otras culturas, los abraza, transforma y los hace propios, la honramos usando ingredientes de primera calidad con tendencia a lo saludable, experimentamos, transformamos, sustituimos y agregamos para satisfacer paladares propios y ajenos.

Coz4You:    ¿Cuál es tu plato favorito en tu restaurante?

Jose Alcerreca, del La Inombrable:

En realidad todo el menú me gusta, pero si tendría que escoger uno, eligiria el aguachile de rib eye; ya que me encanta la combinación de carne y lo picante y asidito del aguachile negro, se me hace una combinación interesante que mezcla la comida mexicana del Pacífico con un buen corte.

Don Fidel Isleño   Risotto con Langosta y Huevo Poche  – Plato con historia

De niño recuerdo que cuando estabamos en situaciones de mala económia,; mi abuelo don Fidel Trejo que fue pescador, al salir de pesca y no era un dia bueno, tan solo llegaba con lo que pudo pescar, entre ello unas colitas de Langosta, pero al ser una familia numerosa  las preparaba con huevo y arroz para que rindiera mas.   Entonces hice un platillo que tuviera esas 3 cosas y me regresará a mi niñez recordando los guisados de abuelo.

Mr. Sanchos Under the Stars

uff! Son muchos! Me encantan los risottos que tenemos, los tacos de porkbelly, y los tortellinis rellenos de queso y bañados en ragú boloñés. Esa pasta es una de mis recetas favoritas para preparar!! El ragú es de larga cocción y con ingredientes básicos! Sencillo pero sabroso!

Chef Manuel Hernández del Pancho’s Backyard:

Así como una madre no tiene hijos favoritos resulta difícil elegir un plato, todos son fruto del amor, hijos de nuestra cocina, sin embargo, estamos especialmente orgullosos de nuestro filete al chipotle, ligeramente picante y ahumado;  O el cosmopolita y atrevido sabor del salmón noruego a la parrilla, con la sutil dulzura de miel de agave;  y ¿qué tal la aromática y satinada crema de cilantro?, o ¿el pescado al axiote…? no, muy difícil escoger

Coz4You:    ¿Qué te inspira Cozumel?

Cozumel me inspira a pensar en que en la playa, por ser una isla, encontramos solo mariscos, sin embargo la cocina de La Inombrable es única por qué no sólo cocinamos mariscos, también nos especializamos en cortes y comida mexicana contemporanea más del centro y norte de México, me inspira a pensar que en La Inombrable no sólo tenemos buena comida, si no también brindamos una experiencia única e inolvidable

Me inspira el mar, la vista, su paisaje, sus atardeceres, el ambiente, sensación de libertad, su vegetación, sus colores vivos en todo….. y el poder aportar a su gastronomía platillos diferentes pero con raíces de la región y mexicanas, que brinden a la localidad y sus turistas experiencias únicas e innovadoras, y ayudar a Cozumel a estar en la mira como gran destino no solo por su belleza paradisíaca sino por su oferta culinaria.

me inspira todo! Su belleza, el mar, la naturaleza… pero sobre todo la gente! Los cozumeleños somos cálidos, recibimos a la gente con brazos abiertos y los hacemos sentir como en casa. Cozumel es realmente un paraíso y hogar para muchos gracias a la gente, a su pasión, calidez, alegría y tradiciones!

Los que hemos sido adoptados por Cozumel y tenemos la fortuna de vivir aquí, non vemos solo la increíble belleza natural, para nosotros Cozumel es un lugar amable, relajado y ajeno al ajetreo de las ciudades, es un lugar en el que se puede ser feliz. Este es el estilo de vida cozumeleño y el que nos inspira a poner una pizca de esta felicidad en todo lo que hacemos.
