Last week Cozumel made the official Guinness World Record with the largest lionfish ceviche ever.  Cozumel restaurants, the National Marine Park, and the Cozumel fishing cooperative worked together to create the event, which took place at Punta Langosta Shopping Center, just in time for the Ironman 70.3 participants to have a taste.

Prepared with over 1,500 lionfish captured in last month’s 5th annual tournament, the record setting ceviche was created, in part, to increase awareness for lionfish consumption.  This voracious predator is not native to the island, and has virtually no natural predators.  Lionfish are a delicious, mild flavored source of excellent fillets, which can be prepared in a variety of ways.  For more information on lionfish, recipes, cooking tips, and more, check out the webpage, “Death to Lionfish.
