What a pleasure to be read, I am Alejandro Torres chef and entrepreneur, always passionate about Mexican gastronomy, as it is a fundamental piece of our culture that brings together families and communities with the perfect pretext of enjoying and sharing many moments of life. I love to experience unique techniques and assemblies, using the pre-Hispanic ingredients and the range of products we inherit from our conquerors and influence that came with it, those of us who are dedicated to bringing the dish to the table wrapping the five senses, we take pride in representing some dishes with recognition as intangible Cultural Heritage of Humanity by UNESCO.

I love cooking and good food, so I made it my engine and inspiration, three years ago I created the challenge and purpose of transcending life through the elaboration of recipes respecting tradition and bringing the touch that makes a difference, to achieve it I give all the passion and taste in each dish.

I consider that the quality and care of the selection of ingredients gives us success in the kitchen, I have dedicated myself in recent years to learn the origin, history and evolution of each of the ingredients that make up the magic of Mexican food, now I share one of the gastronomic assemblies of the Mayab Peninsula, hundreds of years old , a craving: the “PAPADZUL” which in Maya means the “FOOD OF THE MASTER”.

Apparently it is a relatively simple dish that if briefly described would be corn tortillas stuffed with boiled egg (like tacos) bathed with a green sauce. Where pumpkin seed is the star ingredient, to contrast it is accompanied by a tomato sauce with habanero chili and especially a touch of purple onion tanned with sour orange and chopped habanero chili , which makes a difference.

With the pleasure of briefly sharing something about the main ingredients, always give yourself time to know what you are going to eat, you will surely enjoy it more and it will give you topic for conversation.

Pumpkin. – One of the first plants that were grown in Mesoamerica is pumpkin, since then it has been a companion to the diet of Mexicans, because not only does it take advantage of its pulp we also eat its flowers, stems and this time we will use only its seeds slightly toasted on comal.

Egg. – The introduction of hens into the New World, taking them Columbus to the Antilles on their second voyage and Hernán Cortes to the American Continent, in which only one year after their arrival, according to his letter of October 20, 1520.

Tomato. – It is native to the Lower Andes, and was cultivated by the Mexicans or Aztecs known as x-ctomatl, fruit with a belly button of fat water. Because of that word “tomatl” the Spanish conquistadors called it “tomato”.

Habanero Chile. – This fruit comes from a branched herbaceous plant or shrub, which reaches a size up to 2.5 m tall. The immature specimens of habanero chili are green, changing according to their maturity. It provides a unique flavor, but you have to have respect for the level of spicy.

Onion. – Native to Central Asia, and highly introduced to the Mediterranean diet, it is one of the oldest consumer vegetables and its cultivation is widespread all over the world.

Epazote. – This plant is native to The Americas, used by the Aztecs under the Nahuatl name epazotl, from which comes the current name used in that country. It grows on sandy soils and reaches greater size on the banks of rivers and lakes, aromatic herb also used for medicinal purposes and spiritual rituals.

And let’s get to work, now I’ll show you how I’ve achieved my version… I hope you like and enjoy it!

❖ For Papadzul Sauce

1/2 kilogram of peeled and toasted pumpkin seed.

1 cup chicken broth

1 acidified cow’s milk cream 200 ml.

1 sprig of epazote from four to six leaves depending on size

1 pinch sea salt

1 pinch white pepper

Preparation: Set up a batch of pumpkin seeds for the final presentation, incorporate all the ingredients into the blender glass, the chicken broth will be carefully added to grind and get a creamy consistency,

❖ For the red sauce

4 saladette tomatoes

1/2 habanero chili

1/4 onion

2 garlic cloves

Salt and pepper to taste

Preparation:

Cook all the ingredients in a pot, once you have ready the liquefies and saute the sauce, check the salt level and set.

❖ For the garnish

1 habanero chili

1/2 finely chopped purple onion

1 sour orange

Preparation:

Finely cut the purple onion and seedless habanero chilli, in a bowl add the sour orange juice for more than two hours to deflemate and macerate, set aside 

❖ Additional Ingredients

16 nixtamal white corn tortillas

8 boiled eggs

4 tablespoons corn oil

Preparation: first cook the eggs perfectly, separate the white to finely chop it and the wasteland only disperse it into small pieces, proceed to make filled tacos of both, roll compactly so that they do not open.

Now, a fundamental part of the art of good eating will be the presentation:

Arrange on a plate the four tacos per person and bathe with the cream of pumpkin seeds and then spread some of the tomato sauce and delicately garnish with the tanned onion…..

Remember, it’s reveled in the eyes first!

Que gusto poder ser leído, soy Alejandro Torres chef y emprendedor, siempre apasionado de la gastronomía mexicana, ya que es pieza fundamental de nuestra cultura que hace reunir a familias y comunidades con el pretexto perfecto de disfrutar y compartir muchos momentos de la vida. Me encanta experimentar técnicas y ensambles únicos, utilizar los ingredientes prehispánicos y la gama de productos que heredamos de la conquista e influencia de todo el mundo, orgullo de los que nos dedicamos a llevar el plato a la mesa envolviendo los cinco sentidos, representando algunos platillos con el reconocimiento como Patrimonio Cultural Inmaterial de la Humanidad por la UNESCO.

Me encanta la cocina y el buen comer, por ello hice que fuera mi motor e inspiración, hace tres años me cree el reto y propósito de transcender en la vida por medio de la elaboración de recetas respetando la tradición y aportando el toque que marque la diferencia, para logarlo entrego toda la pasión y gusto en cada platillo.

Considero que la calidad y esmero de la selección de ingredientes da el éxito en la cocina, me he dedicado en los últimos años a conocer el origen, historia y evolución de cada uno de los ingredientes que componen la magia de la comida mexicana, ahora te comparto uno de los ensambles gastronómicos de la Península del Mayab, con cientos de años de antigüedad, todo un antojo: el “PAPADZUL” que en maya quiere decir el “ALIMENTO DEL AMO”.

Al parecer es un platillo relativamente sencillo que si lo describiera de manera breve sería tortillas de maíz rellenas de huevo cocido (a manera de tacos) bañados con una salsa verde donde la pepita de calabaza es el ingrediente estrella, para contrastar se acompaña con una salsa de tomate con chile habanero y especialmente un toque de cebolla morada curtida con naranja agria y chile habanero picado, que hace la diferencia.

Con el gusto de compartir brevemente algo sobre los principales ingredientes, date siempre tiempo de conocer lo que te vas a comer, seguro lo disfrutaras más y te dará tema de conversación.

Pepita de calabaza. – Una de las primeras plantas que se cultivaron en Mesoamérica es la calabaza, desde entonces ha sido compañera de la dieta de los mexicanos, pues no solo se aprovecha su pulpa también se comen sus flores, tallos y en esta ocasión utilizaremos solamente sus semillas tostadas ligeramente sobre comal.

Huevo. – La introducción de las gallinas en el Nuevo Mundo, llevándolas Colón a las Antillas en su segundo viaje y Hernán Cortes al Continente americano, en la que solo un año después de su llegada, según su carta de 20 de octubre de 1520.

Jitomate. – Es originario de los bajos Andes, y fue cultivado por los mexicas o aztecas lo conocían como xïctomatl, fruto con ombligo de agua gorda. Debido a esa palabra “tomatl” los conquistadores españoles lo llamaron “tomate”.

Chile habanero. – Esta fruta proviene de una planta herbácea o arbusto, ramificado, que alcanzan un tamaño de hasta 2,5 m de alto. Los ejemplares inmaduros del chile habanero son de color verde, cambiando según su madurez. Aporta un sabor único, pero hay que tenerle respeto por el nivel de picante.

Cebolla. – Originaria de Asia central, y está muy introducida en la dieta mediterránea, es una de las hortalizas de consumo más antiguas y su cultivo está extendido por todo el mundo.

Epazote. – Esta planta es originaria de América, utilizada por los aztecas bajo el nombre náhuatl de epazotl, de donde proviene el nombre actual utilizado en ese país. Crece en suelos arenosos y alcanza mayor tamaño en las riberas de los ríos y lagos, hierba aromática utilizado también con fines medicinales y en los rituales espirituales.

¡Y manos a la obra, ahora te enseño como he logrado mi versión…espero que te guste y la disfrutes!

❖ Para la salsa Papadzul

½ kilogramo de semilla de calabaza pelada y tostada.

1 taza de caldo de pollo

1 crema de leche de vaca acidificada 200 ml.

1 ramita de epazote de cuatro a seis hojas según tamaño

1 sal de mar pizca

1 pimienta blanca pizca

Preparación: Reserva una porción de semillas de calabaza para la presentación final, incorpora todos los ingredientes en el vaso de licuadora, el caldo de pollo lo agregaras cuidadosamente para moler y obtener una consistencia cremosa,

❖ Para la salsa roja

4 jitomates saladette

½ chile habanero

¼ cebolla

2 dientes de ajo

Sal y pimienta al gusto

Preparación:

Cuece en una olla todos los ingredientes, una vez listos lo licuas y sofríes la salsa, checas el nivel de sal y reservas.

❖ Para el adorno

1 chile habanero

1/2 cebolla morada picada finamente

1 naranja agria

Preparación:

Cortar finamente la cebolla morada y el chile habanero sin semillas, en un recipiente agregar el jugo de la naranja agria por más de unas dos horas para desflemar y macerar, reservar  

❖ Otros

16 tortillas de maíz blanco nixtamal

8 huevos cocidos

4 cucharadas de aceite de maíz

.

Preparación: primero cocer perfectamente los huevos, separar la clara para picarla finamente y la yerma solamente dispersarla en trozos pequeños, proceder hacer tacos rellenos de ambas cosas, enrollar de manera compacta para que no se abran.

Ahora bien, parte fundamental del arte del buen comer será la presentación:

Acomodar en un platón los cuatro tacos por persona y bañar con la crema de semillas de calabaza y después esparcir parte de la salsa de jitomate y delicadamente adornar con la cebolla curtida……
